San Fermo 2021 – Macerated White Wine | 100% Garganega

San Fermo is a bold and expressive macerated white wine made from 100% Garganega grapes sourced from old vineyards on the hills of Lake Garda. Following a 40-day natural drying period, the grapes undergo skin-contact fermentation, unlocking depth, structure, and complexity. Aged for 30 months in oak barrels and bottled unfiltered, this wine reflects the raw authenticity of artisanal winemaking.

Appearance: Golden with natural haziness, a visual testament to its unfiltered nature.
Aroma: Rich and layered, with notes of dried apricot, orange peel, honey, and subtle spices.
Palate: Textured and powerful, with firm tannins, ripe stone fruit, and light oxidative elegance. A long, savory finish with hints of almond and wild herbs.

Serving Suggestions

San Fermo pairs beautifully with aged cheeses, roasted white meats, earthy vegetarian dishes, and complex cuisines like North African or Southeast Asian fare. Serve slightly chilled (12–14°C) in a large glass to let the wine breathe and evolve.

Winemaking Process

Hand-harvested Garganega grapes from historic vines are laid to dry naturally for 40 days, concentrating sugars and aromas. After this appassimento, the wine is fermented on the skins, developing body and tannic structure. It is then aged for 30 months in oak barrels, and bottled unfiltered to preserve its full character and living identity.
No fining, no filtering, no compromise. Just honest, time-honored winemaking.

My girlfriend Sabine and I, both graduates in viticulture and oenology, work side by side with my parents Gianluigi and Maria, graduates in agricultural crops.
